GREEN BEANS A LA PROVENCALE

String the beans, wash and drain them. Plunge the tomatoes for 3 to 4 minutes in boiling water, peel them, cut them in half and seed them. In a shallow casserole, slowly sweat the onions and the tomatoes in butter and oil. Add the beans, the garlic and the bouquet garni, season with salt and pepper, cover and cook for 40 minutes on a low heat.
